Director of Irish Spirits - The Dead Rabbit

  • Hailing from Donegal and now based in Galway, Mark is a leading voice on Irish Whiskey education, having worked with the category across hospitality, specialist retail, and global and craft brands. He oversees the Irish spirits selection at The Dead Rabbit while creating a platform for Irish spirits brands to succeed and plays an integral part in the continued development of the most comprehensive Irish Whiskey education platform in the world, the Irish Whiskey Genius program. As far as Irish tour guides go, they don’t get much more experienced, insightful, or passionate than Mark.

LISa donovan

Founder of Rêverie

  • Lisa Donovan is a New York Times columnist, a James Beard Award winning food writer and chef. She has cooked in some of the most renowned kitchens in the country. As well as traveling the world speaking, cooking and teaching, Lisa regularly contributes to Food&Wine Magazine, The Washington Post, Bon Appetit, Saveur Magazine, and many other national publications.

    Lisa has appeared on Mind of a Chef, A Chef’s Table, True South and Vivian Howard’s A Chef’s Life. Her first book, Our Lady of Perpetual Hunger, released through Penguin Press, is available here.

JULIE BELCHER

Founder of Rêverie

  • Julie Belcher of Miette Nashville learned to bake in her home kitchen while working as a barista and a French teacher. After realizing that her love for bread exceeded the rest, she left for France to study under the experts. Following a year of travel, apprenticing under a number of bakers, Julie arrived in Angers, France at La Boulangerie des Carmes which would become her culinary home for several years. This experience fostered an ardor for French culture and cuisine that provides the basis for Miette, a series of home baking classes - Julie’s way of sharing the skills and traditions she now holds so dear.
